Where to find the Agaves
There are approximately 360 types of agave, which are native to the Americas, from the southwest United States to southern South America and 75% of these agaves are native to México. For mezcal, there are 33 varieties of the maguey agave found in México and 13 of these are native to Oaxaca.
The Jabalí and the Madrecuishe magueys grow in Mihuatlán in various municipalities of San Carlos Yautepec.
The same type of maguey can have different colors and flavors from one region to another, depending on where it grows.
